One of my favorite Colombian dishes is Ajiaco. It is a traditional soup, especially popular in Bogotá, my home city. It's made with chicken, three types of potatoes (russet, red and papas criollas), corn on the cob and flavored with guascas, a Colombian herb. It's usually served with cream, capers and avocado on the side, but you can incorporate it into the soup.
